I have a Power Table with a column that pulls in picklist values from Salesforce. There are 5 values, but I would like one of them to be something different than what is in Salesforce.

You can add new value in SF and do record type filtering to just bring the values you want: https://support.titandxp.com/web/filter-per-record-type
In that case, you need to adjust the relevant field on the SF side.
